Raspberry Syrup

Tart red berry that holds its own in soda, tea or a sour.

Raspberry is tart first and sweet second, which makes it more useful than it looks. It sharpens lemonade and iced tea and gives a white-spirit sour a red berry edge.

Method

  1. Chill the coupe with ice and water while you build the drink.
  2. Add 45 ml gin, 20 ml raspberry syrup, 25 ml lemon juice and 5 ml lemon syrup to a shaker.
  3. Fill the shaker with ice and shake hard for 12 seconds.
  4. Empty the coupe and double strain the drink into it through a fine sieve.
  5. Express a lemon peel over the top and lay it on the rim.

Bartender's noteDouble straining takes out the ice chips. Without them the drink stays clear and pink and does not dilute further once it reaches the table.

Zero-proofReplace the gin with 45 ml chilled jasmine tea.
