Cubed, to the brim
Garnish
Dried sour plum, lime wedge

Method

  1. Add 25 ml lime syrup, 10 ml sour plum syrup and 10 ml lime juice to the glass.
  2. Stir for 5 seconds.
  3. Fill the glass with ice to the brim and top with 160 ml chilled soda water.
  4. Drop in 1 dried sour plum and a lime wedge.

Bartender's noteThe dried plum is part of the drink, not decoration. It slowly salts the soda as it sits, so the last third tastes sharper than the first.
