Sour Plum Syrup

Ingredients

• 90 ml (3 oz)Tequila
• 60 ml (2 oz)Coconut water
• 30 ml (1 oz)Sour Plum Syrup
• 60 ml (2 oz)Orange juice
• 60 ml (2 oz)Isotonic drink

For 10 serves: 300 ml Sour Plum Syrup · 33 serves per 1-litre bottle at this measure.

Method

Before serviceCut pineapple wedges and have the sour plums and cherries ready before service.

1. Add 90 ml tequila, 60 ml coconut water, 30 ml sour plum syrup and 60 ml orange juice to a shaker with ice.
2. Shake, then pour into a hurricane glass.
3. Top with 60 ml isotonic drink.
4. Garnish with a sour plum, a pineapple wedge and a cherry.

Bartender's noteThis is tequila without the salt and lime. The sour plum does the sour, salty job instead, and the coconut water rounds off the spirit.

Zero-proofLeave out the tequila and top with soda water in its place.
